Audacious Audio

Having just arrived home from a 21st which included a 1m x 1m pizza, daytona car racing machine and a DJ with the full decks set up I am admittedly fairly stoked on life. Luckily for all of you...im a sharer and what i have to share with you at this point in time is a great song i heard. It is probably not new, NOVA has probably already molested it. But i don't listen to radio so my ears remain untarnished. I speak of La Roux - In For The Kill, particularly the Skream remix. If you will kindly find your way to http://hypem.com/#/search/La%20Roux%20-%20In%20For%20The%20Kill%20(Skream (clickity click click) you will hear it all. I will not lie to you. I am a sucker for a sexy songstress. It all started around the age of 16 when i first heard The Distillers. Brody Dalle remains to this day the hottest punk i have ever seen. That husky voice and swaying swagger does things for me. Lately i have been finding myself feeling emotions that exceed those of pure plutonic joy for such women as Karen O from the Yeah Yeah Yeahs's and now for young Elly Jackson of La Roux. So heres to the lovely ladies of the music industry. Britters? Beyonce? Mariah? Nahhhhh, show me a real woman.

Break the Egg...

As my facebook status changes to show a love for Baileys on the rocks, I keep thinking how well it works in a shot. Two of the most frequently asked shots when I'm working behind the bar would be the 'Jam Doughnut' (Chambord, Baileys with a suger rim) and the 'Cowboy Cocksucker' (Butterscotch Schnapps and Baileys).
A patron the other night at work asked me to make him a shot with banana liquour in it as he had eyed the bottle from behind the bar, I immediatley went for the Bailey's bottle and looking for something else to add to the shot (not really thinking the thing through) I grabbed the bottle next to the Bailey's, Cointreau.

Break the Egg...
  • 25ml Banana Liqueur.
  • 25ml Cointreau.
  • 10ml Baileys.
Layer the ingredients in order, the Baileys will settle between the cointreau and banana liqueur.

Essentially, the Bailey's is the yolk of the brink. The cointreau is strong on its own, and to smooth the harshness of the shot, you can 'break the yolk' into the cointreau. Of course this is totally optional to do... Below is the 'broken' Baileys.

Side story of note: When flying out to New York a year and a bit ago, while stuck in Sydney duty free at the airport, a friend and myself were lucky enough to be present during a baileys taste test promotion. It was 11am at the time and luckily for us, none of the commuters (mostly buisness men) were looking to join in on a good morning bender. So as we waited two hours for our plane to arrive, we indulged in 'trying' a half bottle of baileys between us. Good times.....

Music To Drink To...

...In A Cocktail Lounge.
(I might make this a weekly feature on the blog from now on.)

St. Germain - Tourist.
At any point in time, in at least one cocktail lounge around the world, a track from 'tourist' will be playing. The album embodies the stereotypical sound one would expect to be played in a modern, trendy bar. A perfect mix between smooth jazz and the sequenced stylings of an electronic album.

Pnau - Sambanova.

Pnau have made quite a resurgence in the last year or so due to their pop-orientated third self-titled album, but their debut album 'Sambanova' released in 1999 is just as good in a fairly different style.  The synth's are smooth, the bass is relaxed, throw in some cheeky brass cameo's and you've got a good recipe for cocktail music.

Apple Caprioska

Apple Caprioska
  • 75ml Apple Vodka
  • 4 Lime Wedges
  • Caster Sugar
  • Fresh Apple Juice

Muddle lime with caster sugar, add ice, then vodka, then shake. Pour into a frosted glass and top with apple juice. Garnish with a lime wedge.

Whiskey Grapefruit Sour

I love Whiskey, Here's a whiskey cocktail...

Whiskey Grapefruit Sour.

  • 45ml Whiskey
  • 20ml Limoncello
  • 30ml Lemon Juice
  • 30ml Grapefruit Juice.
  • Dash Sugar Syrup
  • Dash Egg White (Optional).

Add all ingredients into shaker and shake, Strain onto ice and garnish with a twist of grapefruit rind.

The picture directly below shows the recipe with the egg white in it. The appearance is much nicer than without the egg white as it produces a nice foam on top and a stronger colour, however the egg white definently takes the edge off the 'sour' concept of the drink. That's why I much prefer the recipe without the egg white (two pictures down.)

Public Service Announcement

A mixture of more important things to do (read: study) and a bottle of Galliano Black Sambuca haunting my bar were enough to spawn this horrible monstrosity of a beverage. I don't recommend anybody ever replicates it or even trys to drink it....consider this a cautionary tale.

Green Goblin? Shrek? Pick a name...just don't expect much.

1/2 shot of Galliano Black Sambuca

1 shot Kahlua

1/2 shot Frangelico

1 tub Vaalia Vanilla and Blueberry Yoghurt

Add ingredients to shaker and forget you ever had dignity....dont shake it, dont even drink it.

Sorry to have wasted your time.

Yeah, i was serious about the yoghurt...

Papaya from Joe's

JERRY: Bad peach?
KRAMER: It's terrible!
JERRY: Did you get that at Joe's?
KRAMER: Yeah, of course I got it at Joe's.
JERRY: That's surprising, his fruit is usually the best.
KRAMER: You know what I'm gonna do? I'm gonna return this.
JERRY: You're returning used fruit?
KRAMER: Jerry this peach is sub par....
Papaya From Joe's
  • 6 small chunks of Paw-Paw (Papaya)
  • Healthy dash of Agnostura Bitters
  • Brown Sugar
  • 30ml Vodka
  • 15ml Limoncello
  • 10ml Lemon Juice

Muddle Paw-paw along with brong sugar and bitters. Add Ice, then pour vodka, limoncello and lemon juice in. Shake very well and strain into a rock glass filled with ice. Garnish with a slice of lemon and paw-paw.

This drink was and excuse to use the new fruit that has grown on my papaya tree. It turned out very nicely and would be an awsome summer drink. Pity the weather is turning...
